YUM!!!

This is UNQUESTIONABLY my favourite go to meal of all time!

It’s quick, it’s easy and it’s freaking delicious. Prepare a few portions in advance to cut down on meal prep and get creative with the garnish. Green onions, cilantro, hot sauce. Make it your own and you’ll fall in love with it for years to come.


Ingredients

135g Extra Lean Ground Beef

Taco Seasoning

1.5 cups Cooked Basmati Rice

2 tbsp sour cream

2-3 tbsp salsa to taste

1-2 Cups Veggies to taste (spinach, broccoli, mushrooms, peppers)

Whatever herbs you like to garnish

41g protein, 75g carbs, 15g fat


Recipe

  1. Prepare a large batch of Basmati Rice and portion out what you don’t eat for later.

  2. While the rice is cooking, roughly chop desired veggies and pan fry on med-high for 5-10:00 or until desired doneness.

  3. Cook the Extra Lean Ground Beef on high for 400-5:00.

  4. Add Taco Mix and 1/2 a cup of water

  5. Bring water to a bowl and reduce heat to a simmer until desired consistency.

  6. Combine rice, beef and veggies in a bowl.

  7. Place Salsa and Sour Cream on top.

  8. Garnish and enjoy!
