The Big Ass Healthy Salad

“Eat like you want to STUN people when you take your shirt off!”

Well, that’s exactly what this bad boy is all about.

I can’t tell you how many times I’ve eaten this glorious concoction of wonderfulness but suffice it to say, it’s a lot. And the reason is that NO MATTER WHAT you’re trying to accomplish in your training you can always add in or take away a few ingredients.

Need a bit more protein, add more chicken.

Wanna beef up the carbs, add more sweet potato

What about getting your fats in for the day? Easy! Add more olive oil to the dressing.

This is the most easily customizable meal you’ll make. Have it tonight and your body will thank you for it!

*Note: get yourself an Extra Virgin Olive Oil Spray to reduce total fat when preparing meals. Every second you spray is about 1g of fat.


Ingredients

2 Big Handfuls of Spinach

130g Chicken Breast, sliced

200g Sweet Potato, cubed

1/4 Cucumber, sliced

1 Handful of cherry tomatoes

1 tbsp Extra Virgin Olive Oil

2 Tbsp Lemon Juice

1/2 Tbsp Grainy Mustard

43g protein, 42g carbs, 20g fat


Recipe

  1. Preheat the oven to 425°

  2. Chop Sweet Potato into 1/2 inch cubes and place in a non-stick pan. Lightly spray with olive oil and season with salt. Place in oven for 25:00, turning once.

  3. While your Sweet Potatoes cook, season your Chicken with salt and pepper and prepare on either the stovetop or grill (bbq is ALWAYS better!).

  4. Slice up the Cucumber and Cherry Tomatoes into small, fork sized bites.

  5. To make the dressing, combine the Olive Oil, Lemon Juice and Grainy Mustard into a small bowl and stir. Add in some salt and pepper to taste.

  6. Combine the veggies and dressing into a bowl and toss until fully coated.

  7. Add in the Sweet Potatoes and Sliced Chicken Breast and enjoy.

*Note: Preparing a large batch of Chicken and Sweet Potato will save a ton of time for your next Big Ass Healthy Salad!
